Abstract

Ingichka ichakda hazm bo'lmaydigan ozuqa tolasi turi bo'lgan chidamli kraxmal (RS) sog'liq uchun potentsial foydalari tufayli tobora ko'proq e'tiborni tortmoqda. Ushbu maqola RS haqidagi hozirgi bilimlarni ko'rib chiqadi va uning sog'liqni yaxshilovchi xususiyatlariga va uni tayyorlash uchun ishlatiladigan turli usullarga, shu jumladan fizik, kimyoviy va fermentativ yondashuvlarga e'tibor qaratadi. Har bir usulning afzalliklari va cheklovlari muhokama qilinadi va oziq-ovqat mahsulotlarida RS miqdorini oshirish uchun optimallashtirilgan strategiyalarga bo'lgan ehtiyoj ta'kidlanadi.
